The Role of Director of Food and Beverage
Functions as the strategic business leader of the hotel food and beverage/culinary operation, including all Food and Beverage Outlets including Lai Heen Chinese Restaurant, LIMONI Western Restaurant, FOODS All Day Dining Restaurant, The Churchill Bar, Pearl Lounge, In Room Dining, all function rooms and off-site catering. Position oversees the development and implementation of departmental strategies and ensures implementation of the brand service strategy and brand initiatives. The position ensures the food and beverage/culinary operation meets the brand’s target customer needs, ensures employee satisfaction, and focuses on growing revenues and maximizing the financial performance of the department. Develops and implements property-wide strategies that deliver products and services to meet or exceed the needs and expectations of the brand’s target customer and property employees and provides a return on investment.
Key Functions
Ensure the profitability, efficiency and creativity in each Food and Beverage outlets including restaurants, bars, banquet functions, outside catering events and in-room dining.
Partner with PR & Marketing team to increase exposure and coverage of the Food & Beverage outlets in various local and international media and continuously drive Dining Experience Reputations in the market. Have strong PR skill to push F&B Promotion.
Work with Quality Leader to achieve Guest Voice, Social Platforms, Forbes, BSA and LQA Audit K Goal every year.
Knowledgeable in OTA, Meituan, Dianping, and all the media platforms, consistently identifies opportunities to enhance profitability and create value by challenging existing processes, fostering innovation, and driving successful promotional strategies.
Work closely with Executive Chef to maintain HACCP standards.
Plan menus, prices and promotional events for all Food & Beverage outlets in order to maximize revenue generating opportunities.
Identify areas for improvement in service and food & beverage quality by reviewing various service quality audit reports, guest feedback from various channels as well as guest incident reports, and formulate action plans.
Stay attentive to market trends in culinary arts, beverages and service style in order to induce creativity in the operation; Manage Food & Beverage outlets concept changes and renovations as well as the annual CAPEX handling.
Maintain a team of well-trained and motivated colleagues in order to deliver a high level of service according to Group’s and international luxury hotel standards.
Meet and greet all VIPs and influential clients and ensure there is follow-up on all discussed details.
Be part of the Guidance Team and provide advice and support in decisions and projects relating to the entire hotel.
Work closely with all related departments within the hotel to maximize collaboration and efficiency.
To be aware of and comply with all F&B license related matters.
To report any defects in the building or equipment according to the Hotel procedures.
To ensure any related accidents to colleagues, guests or visitors are reported in accordance with hotel procedures.
Provide support to Human Resources in selecting, training and developing the best Ladies and Gentlemen. Build effective teams, and provide comprehensive development and succession plans for the division. Introduce effective training program across the division.
Assures that financial goals of the division and the hotel are being met. Monitors and controls labor expense, and other divisional expenses such as food, beverage supplies and equipment. Works closely with Culinary, S&M and Finance to maximize F&B revenue. Assists in preparing business forecasts. Prepares Annual Budget for the division.
Education and Experience
High Diploma or Degree holder in Hospitality Management.
Minimum 10 years’ relevant working experience in a 300 to 400 room size luxury hotel with at least 5 years in similar capacity in China.
Beverage upsell skill is mandatory. Minimum 10 years of age to serve alcohol beverages.
Senior leader with broad experience in Chinese Restaurant, All Day Dining and Banquet Event.
Open to both Chinese and foreigner willing to accept a local compensation package.
Knowledgeable of Food & Beverage in All Day Dining, Fine dining, Chinese restaurant and Conference & Banqueting operations and skills.
Passion for Food & Beverage and customer service; clear focus on the customer needs and trends in order to meet customer satisfaction; and creativity and flair to exceed customer expectation.
Proven record in managing F&B projects; good knowledge of financial statement and experience in budgeting.
Excellent leadership skills and mastery in delegating multiple tasks.
Demonstrate the highest level of hospitality and professionalism with guest-oriented and service-minded.
Proactive, well-organized, detail-minded with excellent communication and interpersonal skills and can work independently under pressure.
Excellent command of English, Chinese and Cantonese would be a plus, and hands-on experience in MS Office applications.
HACCP certification is required
