How would you describe your Marriott experience?

My journey with Marriott began as a trainee in 2003. Initially in the kitchen, I soon discovered my true passion in pastry. After leaving to refine my skills internationally, I explored culinary arts across New York, Houston, and Lima’s top restaurants, even featuring as a Pastry Chef on a popular morning show. Returning to Marriott in 2010, I’ve since embraced the role of Pastry Chef, growing my career with achievements like the 2014 Global Rising Star award and my own TV show, ‘Dulce Comania’. Today, I continue to shape the culinary scene, contributing to the Culinary Council and leading various regional projects.

What attracted you to want to work at Marriott, vs a more traditional restaurant or culinary space?

Twenty-one years ago, working at the hotel was a moment of immense pride for me, fulfilling a longstanding dream. Each time I passed by the JW Marriott Lima, I imagined myself working there. At Marriott, the care extends beyond work, aspects like family, health, and mental well-being are central to the company. Their unwavering motivation and genuine concern for us associates are why I chose Marriott. Here, I’m more than just part of a team; I’m a member of a caring family, contributing to a work environment that values and nurtures every aspect of our lives.

How would you describe Marriott’s culture?

Marriott’s culture has shaped who I am. It’s more than just a job; it’s about respect, diversity, and teamwork. Here, we’re encouraged to grow, both personally and professionally, in a collaborative environment. Creativity and innovation are always welcomed, with a strong commitment to customer service. How has Marriott supported you as an artisan?

Marriott has consistently supported my growth as a culinary artisan. They endorse and facilitate training for my team and me, send us on trips to learn new techniques, and keep us updated in the culinary field. They also provide opportunities to participate in culinary events and contests, allowing us to showcase our skills and grow professionally. Marriott has been a pivotal support in my culinary development.

What is your favorite part of the job?

From the moment I enter the hotel, you can feel a very positive energy. Every person I come across smiles genuinely, we all care about each other. We’re like one big family. I love getting to the pastry shop, having a lot of events, putting on music and enjoying what I do. The real cherry on top? Watching customers light up tasting my desserts. There’s nothing better than spreading joy with my baking and seeing my creativity make someone’s day!

What does a good day at work look like for you?

A good day in the culinary world is one in which we can satisfy our diners and feel proud of the effort and passion we put into every dish we serve.

What inspires you, and when are you able to be your most creative self?

I find inspiration in Peru’s rich diversity of products. The privilege of working with these ingredients drives my creativity. My creativity peaks when brainstorming with the pastry team, where their feedback, ideas, and praise make my work evolve. Teamwork is vital; the collaboration and idea exchange with associates let my imagination run wild and create unique dishes and desserts.

In what ways are you supported or encouraged to grow, learn and try new things?

Daily interactions, from colleagues to my young daughter’s unique view on creativity, are constant learning experiences. The hotel encourages me by entrusting me with varied responsibilities and allowing the freedom to experiment with new culinary styles and ingredients. This supportive atmosphere, complemented by regular feedback and the opportunity to develop new dishes and menus, inspires my continuous growth and innovation in gastronomy.
