Position Summary – Bar Supervisor 

As Bar Manager, you will take full responsibility for the leadership and operational performance of Booking Office 1869. You will oversee all day-to-day bar operations, ensuring exceptional guest experiences, consistent beverage standards, and strong commercial results. This role requires a hands-on leader with advanced beverage expertise, proven people management skills, and a passion for driving standards, innovation, and team development while upholding the identity and values of the brand.

Key Responsibilities

  • Lead and manage all bar operations, ensuring seamless service delivery across all trading periods.
  • Set, maintain, and continuously improve beverage quality, consistency, and presentation in line with brand and hotel standards.
  • Ensure full compliance with all health, safety, hygiene, and licensing regulations, maintaining a safe and legally compliant environment at all times.
  • Take ownership of stock control, ordering, inventory management, and wastage reduction to achieve beverage cost and margin targets.
  • Drive financial performance by delivering revenue growth, managing service charge performance, and maximising profitability.
  • Develop and implement sales strategies, upselling initiatives, and promotional activity to enhance guest spend and engagement.
  • Lead menu development, seasonal changes, and cocktail innovation, ensuring offerings remain relevant, creative, and commercially effective.
  • Maintain all bar areas to the highest standard of cleanliness, organisation, and operational readiness, ensuring mise en place is consistently maintained.
  • Recruit, train, coach, and develop the bar team, fostering a high-performance culture aligned with hotel values and service expectations.
  • Oversee cash handling, till management, and financial reporting, ensuring accuracy and adherence to financial controls and procedures.
  • Act as a brand ambassador on the floor, leading by example through exceptional guest interaction, storytelling, and service excellence.
