Additional Information: This hotel is owned and operated by an independent franchisee, Aeroviaggi SpA. The franchisee is a separate company and a separate employer from Marriott International, Inc.  The franchisee solely controls all aspects of the hotel’s employment policies and practices, including hiring, firing, discipline, staffing, compensation, benefits, and all other terms and conditions of employment.  If you accept a position at this hotel, you will be employed by a franchisee and not by Marriott International, Inc.

We're looking for a Chef de Partie for the 2026 summer season to add to our Mangia's Brucoli Sicily Autograph Collection.
The ideal resource is responsible for a specific section of the kitchen, ensuring high standards in dish preparation, presentation, and hygiene. He works under the supervision of the Sous Chef and the’ Head Chef and coordinate the junior staff of his section.
 
Responsibility:
 
•Prepare, cook, and present dishes according to restaurant standards and recipes. •Manage a specific section of the kitchen (e.g. meat, fish, vegetables, sauces, pastry)
•Ensure consistent quality and portion control
•Collaborate on menu planning and development
•Maintain cleanliness, organization and hygiene standards of the kitchen
•Train, guide and supervise commis and junior staff in the section
•Monitor inventory and report any shortages or deterioration
•Ensure compliance with sanitation and safety regulations
•Hotel school diploma or equivalent
•Certification in Food Hygiene and Safety (HACCP).
•Proven experience as a Chef de Partie or in similar roles in the kitchen.
•Knowledge of different culinary techniques and management of a specific kitchen team
•Ability to prepare, cook and present dishes in line with restaurant standards.
•Knowledge of the principles of food preservation and inventory control.
