The Commis I – Pastry is responsible for preparing high‑quality pastries, breads, and desserts in accordance with recipes, production standards, and presentation guidelines. This role supports the Pastry Chef by ensuring smooth daily operations, maintaining food safety standards, and contributing to the overall success of the pastry section.
 
POSITION SUMMARY
  • Prepare a variety of breads and pastries by mixing doughs, preparing fillings, proofing, baking, and decorating according to quality standards and daily production sheets.
  • Follow recipes and presentation guidelines, complete food preparation checklists, and monitor food quality and portion consistency throughout the shift.
  • Maintain food safety compliance by completing kitchen logs, following hygiene procedures, checking equipment and food temperatures, and reporting issues to management.
  • Use baking tools, equipment, and appliances safely and appropriately, and keep the Chef informed of excess food for daily planning.
  • Support management with hiring, training, scheduling, coaching, and mentoring team members while maintaining professional communication and teamwork.

About You:  

  • Certificate or diploma in Patisserie, Bakery, Culinary Arts, or related field (preferred).
  • Minimum 2–3 years’ experience in a professional pastry kitchen or similar role.
  • Strong knowledge of pastry techniques, baking methods, and dessert production.
  • Ability to follow recipes accurately, maintain consistency, and uphold high presentation standards.
  • Strong communication skills, teamwork mindset, and a positive, professional attitude.
  • Eligible for individuals with working rights in Fiji.
