Commis III - Bakery

The Commis III – Bakery supports the bakery team by assisting with the preparation of doughs, basic baking activities, and daily production tasks. This role focuses on foundational bakery skills, maintaining cleanliness, following food safety procedures, and helping ensure consistent quality of baked items. The position works under the guidance of senior bakers and contributes to smooth bakery operations and overall guest satisfaction.

• Assist in preparing basic doughs, rolls, buns, and other bakery items following recipes and production sheets.
• Support shaping, proofing, baking, and finishing tasks under supervision.
• Assist with preparing simple fillings, toppings, and components needed for bakery items.
• Safely operate basic bakery equipment such as mixers, scales, ovens, and proofers.
• Monitor and record food and equipment temperatures; report concerns to Supervisors.
• Maintain clean and sanitised bakery workstations, tools, and storage areas.
• Follow all food safety handling procedures, hygiene requirements, and complete assigned kitchen logs.
• Check the quality and portion sizes of items produced to ensure consistency.
• Notify the Chef of leftover or excess items to assist with daily planning and waste control.
• Communicate clearly, maintain a professional attitude, and support teamwork within the bakery and kitchen.
• Follow all company policies regarding uniform standards, safety, security, and confidentiality.
• Perform physical tasks such as lifting up to 25 lbs, standing for extended periods, bending, and working on uneven or slippery surfaces.
• Complete any other reasonable duties assigned by Supervisors to support bakery operations.

• Technical, trade, or vocational qualification in Baking, Cookery, or Culinary Arts (preferred but not mandatory).
• Minimum 1 year of experience in a bakery or commercial kitchen environment.
• Basic understanding of dough handling, proofing, baking techniques, and food safety practices.
• Ability to follow recipes, maintain consistency, and complete tasks efficiently during production periods.
• Good communication skills, a positive attitude, and the ability to work effectively as part of a team.
• Must have legal working rights in Fiji.
