Commis III - Pastry
Sheraton Fiji Golf & Beach ResortThe Commis III – Pastry supports the pastry kitchen by preparing basic doughs, assisting with baking tasks, following production sheets, and ensuring consistent quality in all baked items. This role completes foundational pastry preparation work, maintains a clean and safe work environment, and supports senior pastry chefs in daily operations. The position contributes to team productivity and helps ensure guest satisfaction through consistent pastry production.
POSITION SUMMARY- Assist in preparing breads, pastries, doughs, fillings, and other baked items according to recipes, standards, and daily production requirements.
- Support proofing, baking, and decorating tasks under the guidance of senior pastry chefs.
- Review production sheets to understand daily pastry and bakery requirements.
- Safely operate basic baking tools and equipment, including mixers, scales, ovens, and utensils.
- Check and record temperatures of food items and kitchen appliances; report any concerns to Supervisors.
- Follow food safety handling procedures, personal hygiene standards, and maintain required kitchen logs for compliance.
- Monitor the quality, consistency, and portioning of pastry items throughout the shift.
- Maintain cleanliness of pastry workstations, equipment, tools, and storage areas.
- Inform the Chef of excess or leftover items to support planning and reduce waste.
- Communicate clearly, support teamwork, and maintain a professional and positive working environment.
- Follow all company policies related to safety, security, uniform standards, and confidentiality; report any accidents or unsafe conditions.
- Perform physical duties including lifting up to 25 pounds, standing for extended periods, and working on uneven or slippery surfaces.
- Perform other reasonable duties as assigned by Supervisors to support pastry and kitchen operations.

- Technical, trade, or vocational qualification in Cookery, Pastry, Baking, or Culinary Arts (preferred).
- Minimum 1–2 years of related experience in a pastry kitchen, bakery, or commercial food preparation environment.
- Understanding of basic pastry and baking techniques, food handling, and HACCP‑aligned hygiene practices.
- Ability to follow recipes, maintain consistency in product quality, and work efficiently during high‑volume tasks.
- Strong communication skills, a positive attitude, and the ability to work effectively within a team.
- Must have legal working rights in Fiji.
- No supervisory experience required.
