AC by Marriott Gold Coast | Rivo Restaurant | Pre-Opening Team

At AC by Marriott Gold Coast, we’re bringing The Perfectly Precise Hotel to life — a stylish, thoughtfully edited experience where purposeful design, attention to detail and effortless service come together.

As a Cook within Rivo Restaurant, you’ll support our culinary team in preparing and delivering high-quality dishes while helping ensure every service runs smoothly and consistently.

Working alongside our chefs and wider kitchen team, you’ll assist with food preparation, cooking, presentation and maintaining a clean, organised and efficient kitchen environment.

As part of our pre-opening team, you’ll also have the opportunity to help establish the kitchen routines, standards and culture of Rivo from day one.

What You’ll Do

  • Prepare ingredients including portioning, chopping, weighing and storing food correctly.
  • Wash, peel and prepare fresh fruit and vegetables.
  • Prepare and cook dishes in line with recipes, quality standards and presentation expectations.
  • Prepare both hot and cold food items as required.
  • Operate ovens, grills, stoves, fryers and other kitchen equipment safely.
  • Monitor food quality, cooking times and temperatures throughout preparation.
  • Set up and break down workstations before and after service.
  • Ensure correct portioning and presentation of food.
  • Maintain clean and sanitised kitchen areas, equipment, tools and work surfaces.
  • Communicate any shortages, quality concerns or maintenance issues promptly.
  • Follow all workplace health and safety, hygiene and Marriott International procedures.

What We’re Looking For

You’ll ideally bring:

  • At least 1 year of relevant commercial kitchen experience.
  • Good basic food preparation and cooking skills.
  • An understanding of food safety, hygiene and safe food-handling practices.
  • Strong attention to detail and presentation.
  • Good organisation and time-management skills.
  • The ability to work effectively in a fast-paced environment.
  • Flexibility to work a rotating roster including evenings, weekends and public holidays.

Preferred Qualifications


Experience: At least 1 year of relevant commercial kitchen experience preferred.
Certifications: Current Food Safety Certificate
