Junior Sous Chef

JOB SUMMARY

The Junior Sous Chef supports the day‑to‑day kitchen operations across all restaurant outlets, with a primary focus on Indian cuisine. This role assists in leading the culinary team, ensuring food quality, consistency, hygiene, and guest satisfaction in line with Marriott standards. The Junior Sous Chef is hands‑on in food preparation and supports the Sous Chef and Executive Chef in achieving operational and business goals.

CANDIDATE PROFILE 

Education and Experience

  •  4 years experience in the culinary, food and beverage, or related professional area.

OR

  • 2-year degree from an accredited university in Culinary Arts, Hotel and Restaurant Management, or related major; 2 years experience in the culinary, food and beverage, or related professional area.

 

CORE WORK ACTIVITIES 

 

Culinary Operations

  • Support daily kitchen operations across all outlets, with a primary focus on Indian cuisine.
  • Prepare, cook, and present dishes according to approved recipes, portion sizes, and quality standards.
  • Ensure food is prepared and served in a timely manner during service periods.
  • Assist with menu execution, special events, promotions, and banquets as required.
  • Step in to support other kitchen sections during peak periods.

Quality, Hygiene & Safety

  • Ensure all food handling, storage, and preparation meet hygiene, sanitation, and food safety standards.
  • Maintain cleanliness and organization of workstations and kitchen areas.
  • Monitor food quality, taste, and presentation before service.
  • Report any equipment faults or maintenance issues promptly.

Team Support & Supervision

  • Assist in supervising kitchen associates during shifts.
  • Provide guidance and on‑the‑job training to commis chefs and kitchen associates.
  • Support a positive team environment and lead by example.
  • Communicate clearly with the culinary team and other departments.

Operational & Administrative Support

  • Assist with stock control, ordering, and inventory management.
  • Help minimize food waste and support cost control initiatives.
  • Participate in daily briefings, departmental meetings, and training sessions.
  • Follow Marriott policies, procedures, and brand standards at all times.

Guest Experience

  • Support exceptional guest satisfaction through food quality and consistency.
  • Assist in handling guest feedback or special dietary requests when required.

 

Maintaining Culinary Goals

  • Participates in department meetings and continually communicates a clear and consistent message regarding the departmental goals to produce desired results.
  • Supports and assists with new menus, concepts and promotions for the Restaurant outlets and Banquets.

 

Additional Responsibilities

  • Reports malfunctions in department equipment.
  • Purchases appropriate supplies and manages food and supply inventories according to budget.
  • Attends and participates in all pertinent meetings.
